Freschetta: it’s what’s for dinner

We had Freschetta pizza for the last two nights in a row. Totally healthy, I know. We also had it for lunch last week. Normally we’re not big pizza people — at least, I’m not — but Freschetta recently contacted me to see if I would review their pizzas, particularly their flatbread varieties, and then sent me several coupons to use at my grocery store. Hence the reason for us consuming more pizza in a two weeks period than we normally do in a two month period.

Anyway, due to the local grocery store lacking much in the way of variety, I ran around to a few different stores so that we could try out a few different Freschetta FlatBread pizzas. We ended up with pepperoni, 5-cheese, and even classic supreme (not a flatbread).

First and foremost, what I love about these pizzas are the size — 12″, so they fit right into my toaster oven! After all, why fire up the standard oven and heat up my kitchen when I can just use the toaster oven instead? Secondly, they cook fast. A little too fast, in my opinion. Don’t think you can toss this pizza in and walk away. That 7-9 minute cooking time? It’s more like 6-8 minutes. Seriously, babysit these suckers, or else you’ll wind up with a hardened crust and blackened cheese (yes, I speak from experience).

Flavor-wise, Freschetta pizzas have got it going on! Dan really enjoyed both the pepperoni and the 5-cheese, which the kids also happily devoured. I was left with most of the classic supreme pizza, but that’s because I have a picky husband and picky kids who don’t like “spicy” pizzas. Meh. More for me (I’ll probably vacuum seal individual pieces, since it would take too long for me to work my way through an entire pizza)!

On a related note, I really like Freschetta flatbread pizzas because they’re bariatric friendly! Not in the sense that they’re packing protein or anything, but because the crust is thin and crispy enough that I can keep it down and digest it. I’m sure I’ve mentioned this before, but bread is very iffy for me. Most of it tends to wad up. I was skeptical of the Freschetta pizza, but figured I’d give it a whirl… and it’s a go! The recipe is perfect for turning out a crust that is crisp and delicious without containing any of the typical “wadding” properties that most regular breads and crusts feature.

To conclude this rather rambly post, Freschetta flatbread pizzas are absolutely delicious. They’re affordable, quick & easy to make (perfect for a last minute dinner or quick lunch!), flavorful, and satisfying! My only complaint would be that there isn’t enough cheese on them. But that could be me. I love cheese, and since it’s my major source of protein, I like to really heap it on. But having a spare bag of shredded mozzarella cheese takes care of that just fine. ;)
